Stir Fry Noodles With Chicken is my easy to go recipe. When I need to fix something fast and delicious. And I have a ton of work ahead of me for the day.
I can go with bread or toast for express breakfast, but I’m a Chinese, and we eat noodle for breakfast. Yess, we are!
I love to use Cintan noodles because one the texture is exceptionally smooth and two it was so easy to buy and kept it in the pantry.

Stir Fry Noodles With Chicken | How To Cook Stir Fry Noodles With chicken | Stir Fried Noodles
Yield: 2-3 persons
Ingredients:
2-3cm ginger, slice thinly
1 onion, slice thinly
1/2 red chili, sliced thinly
2 stalks Bok Choy
a handful of spring onion with 3-4cm length
10 frozen Fishballs
165g Dried Noodle (Brand: Cintan)
2-3 tbsp cooking oil
2-liter water
Marinate chicken thigh:
2 chicken thighs, cut into bite-size
1 tsp corn flour
1 tsp oyster sauce
Sauce mixture:
2 tbsp oyster sauce
1 tbsp dark soy sauce
2 tbsp water
Method:
- Sliced ginger, onion, and red chilies.
- Cut bok choy into the half.
- Cut a handful spring onion into 3-4cm length.
- Marinate chicken with corn flour and oyster sauce.
- Soak frozen fishballs with hot water until soften.
- Combine the sauce mixture.
- Bring a pot of water to a boil.
- throw in the dried noodle. Cook about 3 mins.
- Pour the noodle into a sieve and rinse in regular water.
- Heat up a wok. Add cooking oil.
- Throw in the sliced onion & ginger. Cook for about 10-15 seconds.
- Add in marinated chicken meat. Let’s the chicken sit for about 30 seconds before turn it over.
- Pour 1 tbsp mixture sauce, bok choy, and fish balls.
- Add noodle and all the sauce mixture. Stir again.
- Add spring onion and cook until the spring onion soften.
- Add in the red chilies, give a quick stir, and you’re done!
