Hey, do you like stir-fried Loh Shu Fun? Ahh… my husband loves it so much. There is something about Loh shu fun texture that makes it pleasant to eat. It’s not too soft and slightly chewy at the end.
Stir-Fried Loh Shu Fun Recipe 炒老鼠粉
Serves: 2-3 person
Ingredients:
500g loh shu fun, blanch in hot water
70g dried shitake mushroom, soak, squeeze and slice thinly.
150g choy sum
2 eggs
2 TB minced garlic
some chopped spring onion
4 slices of ginger
100g minced pork/chicken
100ml chicken stock
3 TB cooking oil
2 TB water + 100ml water
1 TB Cornflour Liquid ( 1 TB cornstarch + 1 TB water)
Seasoning :
1 TB Oyster sauce
1 TB Soy sauce
2 TB Dark soy sauce
1 TS Sugar
Garnishing :
Fried shallot
some chopped spring onion
Method:
- Heat up a pan and add 3 TB cooking oil.
- Add ginger slices and 4TB minced garlic.
- Add 100 minced pork/chicken and cook for 2-3 mins.
- Add shitake mushroom slices.
- Season with 1 TB oyster sauce, 1 TB dark soy sauce and 2 TB water. Cook for 1-2 mins.
- Add 500g Loh Shu Fun, 1 TB Soy sauce, 2 TB Dark soy sauce, 1 TS sugar, 100ml chicken stocks, and 150g choy sum.
- Cover for 5 minutes and if too dry, add some water.
- Add 2 beaten eggs and if necessary, add 1 TB cornflour water.
- Garnish with some fried shallot and chopped spring onion and it’s done! Enjoy guys.
