Salt Grilled Fish is my mom’s recipe, and we adore it so much. Those days, mom used to make us regularly. But, since the arrival of my nephew, we hardly having this dish anymore. She was too busy taking care of the little one.
But, this is a simple and yet unbelievable recipe that I love, not only me. The whole family. So, today I have a chance to create this recipe with mom, and maybe I can create this more often soon. Well, this recipe is not complicated that I promise you.
The main ingredients of making this Salt Grilled Fish are by using Fresh Red Tilapia Fish and some coarse salt. That’s it! As simple as that. However, the most importantly, the fish must be fresh.

SALT GRILLED FISH – IKAN BAKAR GARAM
Serve: 4 Pax
Ingredients:
1.20kg Fresh Red Tilapia fish, leave the scales on the fish
1/2 cup Coarse Salt
Combine Dipping Sauce ingredients:
1 tbsp black vinegar
2 tbsp soy sauce
1.50 tbsp sugar
1 tbsp finely chopped Parsley, only take the stalks
1 tbsp finely chopped Spring Onion
2 Red Thai’s Chilies, finely chopped
Method:
1. When buying a whole fish, ask the seller to remove the guts from the gills of the fish. And leave the scales on the fish.
2. Clean up the fish well and using paper towels absorb the water inside out.Then, air dry it while getting ready all the ingredients.
3. In a mixing bowl, add all the dipping sauce ingredients:-
1 tbsp black vinegar
2 tbsp soy sauce
1.50 tbsp sugar
Mix well.
4. Finely chopped the parsley (stalks part only), spring onion and red Thai’s chilies. Combined with the sauce mixture. Put aside.
5. We’re using a Double-sided grill pan, which is the best option for this recipe.
6. Heat up the grill pan.
7. Add 1/2 of the salt.
8. Wipe the fish one more time before grilling on the pan.
9. Spread the balanced salt on top of the fish.
Tip: Do not put salt into the fish belly, just the scales.
10. Let’s the fish sit on the salt for five mins on a high heat.
11. After five mins, cover up the grill pan. Reduce to medium heat. Cook for another 5-8mins.
Tips: From time to time, you can check on the fish. But, not too frequent. The fish should have slight char marks on them to cook fully.
12. After 5-8 mins, flip over the grill pan.
13. Increase to high heat. And continue cooking for another 5-8mins.
Tip: If it too hot and burnt quickly, reduce to medium heat.
14. Once it was done, transfer to serving plate.
Tip : How to Tell if Fish is Done ?
Poke the tines of a fork into the thickest portion of the fish,Then gently twist the fork and pull up some of the fish. Undercooked fish resists flaking and is translucent. If your fish is undercooked, just continue cooking it until it is done.
15. Remove the fish scales and skin, and you’ll have beautiful and juicy fish meat inside.
16. Serve it with the serving sauce and a bowl of warm and fluffy rice.
