I always have fried rice on my weekly menu because I’m a busy woman who has a job and happens to run a couple of businesses online like most of you.

My schedule can be pack daily from writing, creating, shooting, editing, and lots of other stuff.

You should know me by now; I like to have a quick and easy recipe in my kitchen. And I’m not particularly eager to spend hours and hours in my kitchen to whip something up except, of course, on weekends or when I’m doing some experiment in the kitchen.

So, this egg fried rice can be handy at times. Since the pandemic of Covid-19, we never order in or even eating out.

We prefer to prepare our own food. I’d prepare the food from breakfast, lunch, and dinner, and occasion supper. And my husband will help out whenever he can.

To make this egg fried rice is quite easy, as long as you know the steps.

I’d add many ingredients to the egg fried rice, but if you don’t prefer any of the ingredients, you can omit it.

But I’d keep a few basic ingredients like rice, eggs, minced garlic, and chopped spring onion.

Serves : 3-4 person


6 tbsp cooking oil

3 tbsp minced garlic

3 eggs

50g pork slices (use any meat and marinate with some oyster sauce)

4 shallot, sliced thinly

1 fish cake, sliced thinly

1 cup of sweet corn kernels

1 tbsp soy sauce

A few dashes of white pepper

450g overnight cooked rice

1 cup chopped spring onion


2 tbsp soy sauce

2 tbsp oyster sauce

A few dashes of white pepper


  1. Heat a frying pan with 4 tbsp cooking oil.
  2. Add 3 tbsp minced garlic and cook until golden brown and remove. Leave the oil. Set aside.
  3. Using the same frying pan, and add 3 eggs. Scrambled the egg and pushed it aside.
  4. Add 1 tbsp cooking oil. And add marinated pork meat or any meat that you like.
  5. Cook the meat and push it over to one side of the pan.
  6. Add the shallot, cook until soft and slightly brown. Add 1 tbsp cooking oil if too dry. Push aside.
  7. Add fish cake slices and 1 cup of sweet corn kernels. Give a few seconds to stir.
  8. Season it with 1 tbsp soy sauce and a few dashes of white pepper. Give a quick stir.
  9. Add the overnight cooked rice. And mix it well.
  10. Increase the heat. You want to make sure the rice is not wet. It has to be dry. Push the rice down for a few seconds and toss it over. Repeat this a couple of times.
  11. Add a cup of chopped spring onion and fried garlic. Mix well.
