Hey. I love fish, but I don’t think I eat enough of them.

Growing up in Kuala Lumpur is the best. We always have abundant fresh fish to eat.

So, this is one of my favourite recipes- Fried fish with oyster sauce.

FRIED FISH WITH OYSTER SAUCE

Ingredients:
500g golden pomfret
Enough cooking oil to fried the fish
A few slices of ginger
2 tbsp cooking oil
2 tbsp minced garlic
3 Dried Shitake mushroom, soak, squeeze out water and cut into thin slices
300ml Water
1.5 tbsp Oyster sauce
1 tbsp abalone sauce
1/2 tsp salt
1/2 tsp Sugar
A few dashes of White pepper
30g Spring onion, cut into 4 to 5 cm length
1 Small red chilli slices
Cornstarch water (1.5 tbsp cornstarch + 1.5 water)

Method:
1. Heat up a pan with enough oil to fried the fish. Cook each side for 5 to 7 mins. Remove and set aside.
2. Leave about 2 tbsp oil in the pan.
3. Add a few slices of ginger.
4. 2 tbsp Minced garlic. Cook for 1min.
5. Add 3 Dried Shitake mushroom slices.
6. Pour 300ml Water,1.5 tbsp Oyster sauce,1 tbsp abalone sauce,1/2 tsp salt,1/2 tsp sugar and a few dashes of White pepper.
7. Add spring onion and small red chilli slices for spiciness.
8. Add the cornstarch slurry to thicken the sauce.
9. Pour the sauce on to the fish.

And it’s done!
