I love to spend my weekend cooking or baking for my family. It is just therapeutic for me. Lately, I tried to incorporate more tofu into my meal because tofu is much healthier and I need relatively more protein in my diet.

Tofu used to be inexpensive years ago, and we used to eat tofu almost every week. It’s just cheaper for us.

I think, braised tofu with minced meat it’s really common dishes in home cook menu. Lot’s of people eat this all the time at home. But, I did not make this enough, may be I should.

Instead of using soft tofu (which I like), you’ve to use firm tofu.It’s because soft tofu will easily fall apart when you start to braise it. The thing about braised tofu is such a light and warm dish, and it made my belly warm and cosy.

Do you have that thing- when eating particular food your jaw get tired when chew? This dish is just opposite of that. Maybe it is one of the reasons I love tofu. Less chewing, is that make sense to you? I hope it did.

This dish is really good with a bowl of warm fluffy white rice; such a humble home-cooked food is the reason why I like to cook because it tastes so homely.

Braised Tofu

With Minced Meat

Yield: 4-5 person

Ingredients :
1 whole garlic- minced
7-8 spring onion- chopped
3 Thai red chillies, sliced
3 tbsp grated ginger
2 x Tofu (slightly hard) – cut medium size cubes
300 g minced chicken and pork meat
3 tbsp sesame oil
2 tbsp black bean paste
1 tbsp Black bean, soak for 10 mins and drain.

Sauce: Mix
2 tbsp black vinegar
2 tbsp oyster
2 tbsp soy sauce
1 tsp chilli oil/Heng Chili
1 tsp Sugar
1 cup chicken stock
1 tbsp cornstarch + 2 tbsp water

Marinate minced chicken & pork: For about 15-20mins
1 tbsp oyster sauce
1 tbsp oil
1 tsp sesame oil
1tbsp corn flour
2 tbsp water
1 tsp White pepper
1 tbsp Shao Shing wine

Method:
1. Marinate minced chicken and pork with the above items.
2. Drain tofu. Cut in cubes.
3. Mix sauce.
4. Heat up wok.
5. Add 3 tbsp sesame oil
6. Add ginger, garlic, Thai red chillies and spring onion.
7. Add 2 tbsp black bean paste.
8. Add 400g ground pork/chicken. Stir and separate the meat. Add some water if necessary.
9. Once pork cook, add black bean.
10. Add sauce, bring into a boil, add tofu. Stir well.
17. Add cornstarch water
18. Remove from heat.
19. Garnish with spring onion.
20. Serve with white rice.
