Just coincidence last weekend, I have leftover blueberries and cream cheese laying around my fridge. So, I just need to get four large croissants to complete this recipe as other ingredients I have in my pantry.

I baked bread pudding quite often and looked at the recipe; the steps are almost similar with making bread pudding. If you want to check out my bread pudding recipe, I have it here. And this recipe had won many “sweet tooth” heart.

I came across this Blueberry Croissant Pudding when I was searching through the internet. When, I saw the recipe with a combination of cream cheese and croissant, which I found a bizzare combination for my taste bud. I guess, I so intrigue to know how this recipe will end. So, I make one.

The Blueberry Croissant Pudding is so delicious and creamy. This combination is something that I’ve never experience before. It tastes sweet, creamy, smooth and with a hint of sourness from the cream cheese. It served warm, but it still tastes good after cooling down.

This recipe is a keeper. If you need something fast, delicious and simple to whip, this is it! I might betray my bread pudding by loving this recipe even more.LOL.

Blueberry Croissant Pudding

Serves : 4-5 person

Ingredients:
4 large croissants, shred into big pieces
1 cup fresh or frozen blueberries
250g cream cheese, softened
1/2 cup sugar
3 tbsp sugar, sprinkle on top
2 eggs
1 teaspoon vanilla
1 cup milk

Method:
1. Preheat oven to 180c.
2. Place croissant pieces in a 9 inch round pan.
3. Sprinkle with blueberries.
4. Using a mixer. Beat the following ingredients until well blended.
250g cream cheese, softened
1/2 cup sugar
2 eggs
1 teaspoon vanilla

5. Gradually add milk, beating well after each addition.
6. Pour evenly over croissant pieces.
7. Let stand 30 minutes or soak overnight.
8. Before bake, spinkle with 3 tbsp sugar.
7. Bake at 180c for 35 to 40 minutes or until set in center and golden brown.
8. You may want to cover it with foil for the last 10 minutes if the tops are getting too browned.
9. Serve warm. Sprinkled with powdered sugar.
