Fried Fish with Soy Sauce Recipe

Yesterday, I went to the supermarket and this particular Golden Pomfret or to be accurate the name is Pompano are actually on promotion for RM12 per piece. Not only it huge but fresh too. So, I can’t resist and grabbed two.

I think the best way to cook this fish is to deep fry and drizzle with soy sauce mixture. I love to top with fried ginger and scallion. And oh boy… the soy sauce mixture is so tasty and goes really well with the fish.

And if you love spicy, feel free to add more cili padi or else, you can just omit it.

Fried Fish with Soy Sauce Recipe

Ingredients:

500 gram Pompano/Golden pomfret,or any kind of fish that great to deep fry.

2 inch ginger (peeled, cut into thin strips)

1 stalk scallion (cut into 2-inch length and then into strips)

4-5 shallot (cut in slice)

1-2 red cili padi/Thai chili (cut in slice)

Oil for deep frying

Soy sauce mixture:

3 tbsp soy sauce

1 tbsp Shaoxing Wine

4 tbsp water

2 dashes white pepper powder

¼ tsp sesame oil

2 tbsp sugar

Method :

  1. Remove the gills and clean the fish thoroughly.
  2. Pat dry with towels.
  3. In a small mixing bowl, mix the soy sauce mixture and set aside.
  4. Heat up a big wok to deep fry the fish.
  5. Deep fry the fish until golden brown and crispy. Transfer to serving plate.
  6. In a wok, add 2 tbsp of cooking oil. Add in ginger strips and stir fry until golden brown and transfer out.
  7. With balance oil in the wok, add another 2 tbsp oil and add the sliced shallot. Fry until brown and transfer out.
  8. Using the same wok, remove out the oil. Add the soy sauce mixture. Cook until sugar dissolve and boiling.
  9. Pour the soy sauce over the fish and garnish with ginger strips, scallions, cili padi & fried shallot.
